During maturation, alcohol is produced and carbon dioxide is trapped in the bottle which results in the sparkling bubbles we see when we pour a glass of Moet & Chandon or Veuve Clicquot. It is further processed to give it unique characteristics of complexity, aromatic flavours, distinctive taste and class.
